We use giant squid (Dosidicus Gigas) from the coasts of Peru and Mexico. It has a pleasant, fish-like smell and taste with hints of seafood, and a soft, smooth texture.
We cook the raw material in immersion, with boiling water temperature to achieve the right texture and flavor. Vacuum skin tray packaging, to preserve its characteristics.
Ready to cook. Heat it in a bain-marie, grill, barbecue, steam, microwave or even in cold preparations.
