We use giant squid (Dosidicus gigas) from the Peruvian and Mexican coasts. It has a pleasant fishy smell and flavor with hints of seafood and its texture is soft and smooth.
We cook the raw material in immersion, with boiling water temperature to achieve the right texture and flavor. Vacuum skin tray packaging, to preserve its characteristics.
